This mini ebook is my first attempt at pulling some of that together in one place. I kept it small on purpose — no fluff, just 5 recipes. But this is the first of many. I’m already planning the next one, and maybe (one day) a full cookbook.

The Coeliac Symptoms No One Warned You About (Yes, Even That One)

Living with coeliac disease is like being handed a lifetime subscription to surprises. You think it’s just stomach issues? Oh, sweet summer child. You’re in for a treat (spoiler: it’s not gluten-free cake).

After years of navigating this autoimmune minefield, I decided it was time to list every known symptom of coeliac disease in one place. Why? Because even I was shocked at how many there are—and I live with it every day.

We’re talking everything from the classic (bloating, fatigue, "I think I might actually die if I eat that sandwich") to the unexpected ("Why is my skin doing that?" and "Wait, that’s a symptom too?!").

I wrote this post with a good dose of humour, sarcasm, and that special kind of coeliac frustration we all know too well. And apparently, that hit a nerve—in the best way.
This post became the most popular one I’ve ever written, pulling in over 1300 views in a single day. That’s nearly double my previous best.

So clearly, it’s not just me lying awake wondering if weird leg pain, mood swings, and random vitamin deficiencies are part of the gluten-free circus.

Sticky Sesame Paneer (Naturally Gluten-Free & Ridiculously Tasty)

Craving a quick fakeaway that’s naturally gluten-free and doesn’t taste like disappointment?

Meet your new midweek hero: Sticky Sesame Paneer. It’s crispy, sticky, sweet, a little spicy, and packed with flavour. Oh—and it’s ready in 15 minutes. Perfect for when life is chaotic, but your tastebuds still deserve nice things.


Ingredients (Serves 2–3):

  • 200g paneer, cut into 1-inch cubes

  • 1 tbsp sesame oil

  • 60ml gluten-free soy sauce (or coconut aminos if that’s your vibe)

  • 2 tbsp honey

  • 1–2 tsp soft brown sugar (adjust depending on how sweet you like it)

  • 1 tsp garlic granules

  • Pinch of red pepper flakes (optional if you’re a spice wimp like me)

  • 1 tsp black sesame seeds (plus extra for garnish)


Tools for the Job:

  • A good non-stick frying pan

  • A spatula or tongs for flipping your cheesy bites

  • A small bowl for mixing your sauce

  • A measuring spoon and jug


Method:

  1. Heat the sesame oil in a frying pan over medium heat. Add the paneer cubes and fry until golden brown and crispy on all sides. This takes about 5–7 minutes, depending on your pan and your patience.

  2. While the paneer is frying, mix the soy sauce, honey, brown sugar, garlic granules, red pepper flakes, and sesame seeds in a bowl. Give it a good stir.

  3. Pour the sauce into the pan with the crispy paneer. Stir gently to coat everything, then let it bubble away for a few minutes until the sauce thickens and goes beautifully sticky.

  4. Sprinkle with a few extra sesame seeds, serve hot, and try not to eat it all straight from the pan (no judgement if you do).


Serving Suggestions:

  • Over jasmine or basmati rice

  • With gluten-free noodles

  • In lettuce wraps for a lighter meal

  • Or straight from the pan, cold, at midnight. Live your best life.
