The Coeliac Symptoms No One Warned You About (Yes, Even That One)

Living with coeliac disease is like being handed a lifetime subscription to surprises. You think it’s just stomach issues? Oh, sweet summer child. You’re in for a treat (spoiler: it’s not gluten-free cake).

After years of navigating this autoimmune minefield, I decided it was time to list every known symptom of coeliac disease in one place. Why? Because even I was shocked at how many there are—and I live with it every day.

We’re talking everything from the classic (bloating, fatigue, "I think I might actually die if I eat that sandwich") to the unexpected ("Why is my skin doing that?" and "Wait, that’s a symptom too?!").

I wrote this post with a good dose of humour, sarcasm, and that special kind of coeliac frustration we all know too well. And apparently, that hit a nerve—in the best way.
This post became the most popular one I’ve ever written, pulling in over 1300 views in a single day. That’s nearly double my previous best.

So clearly, it’s not just me lying awake wondering if weird leg pain, mood swings, and random vitamin deficiencies are part of the gluten-free circus.

If you’re coeliac, suspect you might be, or just want to understand why your gluten-free mate is constantly tired, bloated, or googling obscure symptoms at 2am, this post is for you.

Check it out here:
Coeliac Disease: The Symptoms That Keep On Giving

And if you’ve got a weird coeliac symptom of your own, drop it in the comments. Let’s build the most painfully relatable list on the internet.

Because apparently, misery does love company—and so do gluten-free rants.

Sticky Sesame Paneer (Naturally Gluten-Free & Ridiculously Tasty)

Golden, sticky, and packed with flavour—this sesame-glazed paneer is naturally gluten-free and seriously addictive.

Craving a quick fakeaway that’s naturally gluten-free and doesn’t taste like disappointment?

Meet your new midweek hero: Sticky Sesame Paneer. It’s crispy, sticky, sweet, a little spicy, and packed with flavour. Oh—and it’s ready in 15 minutes. Perfect for when life is chaotic, but your tastebuds still deserve nice things.

Ingredients (Serves 2–3):

  • 200g paneer, cut into 1-inch cubes

  • 1 tbsp sesame oil

  • 60ml gluten-free soy sauce (or coconut aminos if that’s your vibe)

  • 2 tbsp honey

  • 1–2 tsp soft brown sugar (adjust depending on how sweet you like it)

  • 1 tsp garlic granules

  • Pinch of red pepper flakes (optional if you’re a spice wimp like me)

  • 1 tsp black sesame seeds (plus extra for garnish)

Tools for the Job:

  • A good non-stick frying pan

  • A spatula or tongs for flipping your cheesy bites

  • A small bowl for mixing your sauce

  • A measuring spoon and jug

Method:

  1. Heat the sesame oil in a frying pan over medium heat. Add the paneer cubes and fry until golden brown and crispy on all sides. This takes about 5–7 minutes, depending on your pan and your patience.

  2. While the paneer is frying, mix the soy sauce, honey, brown sugar, garlic granules, red pepper flakes, and sesame seeds in a bowl. Give it a good stir.

  3. Pour the sauce into the pan with the crispy paneer. Stir gently to coat everything, then let it bubble away for a few minutes until the sauce thickens and goes beautifully sticky.

  4. Sprinkle with a few extra sesame seeds, serve hot, and try not to eat it all straight from the pan (no judgement if you do).

Serving Suggestions:

  • Over jasmine or basmati rice

  • With gluten-free noodles

  • In lettuce wraps for a lighter meal

  • Or straight from the pan, cold, at midnight. Live your best life.

Why You’ll Love This Recipe:

  • Naturally gluten-free

  • Super quick – ready in 15 minutes

  • Vegetarian-friendly

  • Packs a serious flavour punch

  • Feels like a treat, but easy enough for a weekday

Treat Yourself: Gluten-Free Crème Brûlée Pancakes You’ll Want Every Day (Not Just Pancake Day)

A close-up of a crepe in a black frying pan, sprinkled with brown sugar, being caramelised with a blowtorch. The sugar is turning golden brown, creating a crispy, brûlée-style topping. A hand is visible holding the blowtorch.
Gluten-Free Crème Brûlée Pancakes

If you thought going gluten free meant waving goodbye to indulgent desserts, let me gently (but firmly) crack that myth like the caramelised sugar topping on a crème brûlée. Because over on The GF Table, I’ve shared a recipe that proves we coeliacs can have our pancakes and brûlée them too.

Introducing: Crème Brûlée Pancakes – a show-stopping gluten-free dessert that’s deceptively simple and outrageously delicious.

I originally created this for Pancake Day, but honestly? These need zero justification. Make them on a Sunday morning, a date night, or just because your sweet tooth is feeling bossy. You won’t regret it.

So what makes them special?

You start with beautifully golden, gluten-free pancakes—thin, light, and just the right amount of bounce. Then comes the magic: a rich vanilla custard, lovingly spooned over the pancakes and topped with a crisp sugar crust, torched to perfection. Think crème brûlée... but in pancake form.

This recipe is:

  • 100% gluten free

  • Surprisingly easy to make (no Michelin stars required)

  • Ideal for impressing guests or simply treating yourself like the legend you are

Here’s what you’ll get on the blog:

  • A full step-by-step recipe with easy-to-follow instructions

  • A list of tools you'll need (because no one wants to be halfway through a recipe realising they’ve misplaced the blowtorch)

  • Tips for nailing that perfect brûlée crunch

Seriously, it’s one of my favourites—and judging by the feedback, I’m not alone. Whether you’re gluten free or just looking to try something a bit special, this one’s worth a click.

And don’t forget to tag me if you give it a go—I want to see your golden, brûléed beauties!
